The Pistoia mountains are renowned for the fruits of the undergrowth – raspberries, blackberries, strawberries, currants but above all wild bilberries – to which various events are dedicated during summer.
The protagonists of the mountain tables are also the mushrooms of the Apennines – of which the porcino is the undisputed king, bought fresh between the end of summer and the beginning of autumn – and chestnuts, perfect on their own or, in the form of flour, in typical recipes, such as that of the “necci” with ricotta.
At high altitudes where you can breathe fresh and clean air, among the green pastures, an intense and fragrant milk is produced, from which dairy specialties are born such as the excellent raw milk pecorino, a Slow Food presidium.
